Intro to Sous Vide

About a year ago, I saw an article about an interesting Kickstarter project for a sous vide circulator by Sansaire.  At that point, I had never heard of sous vide and it's possible I had not heard of Kickstarter, either.  The only thing I understood is that cooking sous vide would allow me to cook a steak that was perfectly medium rare from end to end.  This was the sales image that made me want to explore sous vide circulators:

So, sure, this isn't exactly a fair comparison, since we can all agree the steak on the right wasn't cooked by a particularly masterful chef, but the point remains that it's hard for me to get a totally even texture and temperature in my steaks.  They're often more well-done on the outside or on the ends.  The more reviews I read about how easy sous vide circulators were to use and how amazing meat tastes when cooked sous vide, the more I wanted to give this thing a shot.

(Plus, if you know me at all by now, you know I'm a sucker for interesting kitchen gadgets.  My pressure cooker is still the MVP of my kitchen, years later.)

The other week, I decided to take the plunge.  I had decided on the Anova sous vide circulator (it seems like the choice is either Anova or Sansaire) and was about to use my Amazon.com points to buy this one, when I did a bit more googling and realized that Anova has a new sous vide circulator model with bluetooth connectivity, and it's about $25 less than Amazon if you purchase directly from Anova's page.  I found a coupon for another $25 off at Anova so that sealed the deal.

(I liked the idea of getting a circulator instead of a fixed sous vide oven, since a circulator allows you to turn any basin into a sous vide oven.  So if you have thirty pounds of beef to cook, stick it in a huge rubbermaid bin, stick the sous vide circulator in there, and you're all set.  When will I ever cook that much beef?  Probably never.  But I COULD.)

My initial experience with the Anova was mixed.  I was excited to try the bluetooth connectivity features, which allow you to control the temperature of the water from your phone, make your circulator follow recipes from Anova's app, and alerts you when the water is ready:



But, what I learned the hard way while trying to cook a corned beef brisket for ten hours:  if you walk away from your Anova such that the bluetooth is disconnected, the device TURNS OFF.  And STOPS COOKING your food.  (As in, you arrive home after being gone five hours only to realize that your corned beef has been NOT cooking for all that time and you're having people over for dinner in two hours.  Luckily, I dumped it in the pressure cooker with some sauteed onions and water for an hour and a half and it came out GREAT.  Best corned beef I've ever had, in fact.  Not sure if the pressure cooker or the sous vide is to thank for that one.)

So, basically, the bluetooth feature is useless as far as I can tell.

Last night, I gave the sous vide a try with steak.  I had a big win at work and decided to treat myself to a fancy ribeye (my favorite cut of steak).  I had a community meeting to attend around dinnertime, so I rubbed the steak with salt, pepper, onion powder, garlic powder, thyme, and a little butter. 


 Then I sealed it in a ziploc bag, dropped it in a 130 degree water bath, and went on my way.

 
It's only supposed to cook for an hour at that temperature, but I didn't get back to my house for almost three hours.  I'd read that keeping a steak in the water bath for longer than an hour wouldn't hurt it, since it would not exceed the 130 degree temperature of the water...so I figured I'd test that feature?

Once I got home, I seared the steak for a few seconds on each side:

So, overall, I'm pretty pleased with the sous vide so far.  The bluetooth technology is just for show, but the implement itself seems to do a GREAT job with meat.  I'm going to try fish and eggs in the next week or so...I'll let you know how that goes.

Firmoo Sale!

Hi blogosphere!  As we rev up for Black Friday, I owe Firmoo a post about their online glasses service.  They sent me a pair of glasses last month and I promised them a post, so here it is!  I'll put up a substantive post shortly; I have a BIG update for you.

In any case, onward with the quasi-shilling...("quasi" because I do actually use/like Firmoo even when they are not sending me free glasses)

A couple of years ago, Firmoo contacted me about trying their products, and I've been a loyal customer of Asian prescription glasses websites, including Firmoo, ever since.  If you haven't tried these sites, check out my 2012 post about the process of ordering from Firmoo here.  Ordering is easy, delivery is fairly speedy, and the selection of frames is pretty fantastic.  I've never tried the returns process, but the last pair of lenses I received from Firmoo appeared to have some issue with the pupillary distance and Firmoo CS was all over the problem with offers to figure out where the Rx process went wrong.  I also got my sister hooked on Firmoo and she has accessorized herself since then with tons of hipster pairs of glasses on a student budget.

Anyhoo, Firmoo is having a Black Friday sale (as my sister eagerly told me yesterday), so now might be a good time to experiment!

Sponsored Post: Because I Want a Sodastream

I spare you guys most of the sponsored post requests I receive, because who wants to read that stuff?  The exceptions are as follows:

This post about SodaStream falls into the latter category.  I love seltzer water and have been drinking it daily since I discovered it a few months into Weight Watchers in 2009-2010.  It has the fizzy, stomach-filling satisfaction of soda but without the calories or artificial sweeteners.  (The more I read about artificial sweeteners and diabetes, the more leery I am of them.  See, e.g., here.)  I mostly drink plain soda water, and if I want to get fancy I add a squirt of lime.  Heaven.

I get free soda water at work, but the day will eventually come when that supply runs out and on that day, I will want the ability to carbonate my own water.  And that's where SodaStream will come in.

SodaStream wants you to know that Scarlet Johansson is now the new face of SodaStream.  Look how much she loves SodaStream!



There will be some kind of official announcement about her brand ambassadorship on Super Bowl Sunday.  In the meantime, there seems to be quite a bit of controversy surrounding her sponsorship!  The controversy is actually pretty relevant to this blog, in fact.  SodaStream is an Israeli company that operates in a disputed area of the West Bank, and critics of the company argue that the the factory is taking advantage of the limited employment opportunities in that area by operating there.  

In response to criticism about this, SodaStream said through Johansson:

"I remain a supporter of economic cooperation and social interaction between a democratic Israel and Palestine," the actress said. "SodaStream is a company that is not only committed to the environment but to building a bridge to peace between Israel and Palestine, supporting neighbors working alongside each other, receiving equal pay, equal benefits and equal rights. That is what is happening in their Ma’ale Adumim factory every working day."

Very interesting!  I had no idea that SodaStream was an Israeli company or that there was controversy surrounding their operations.  For a Jewish Girl, I admit that I have little to no patience for Israeli politics.  All I know is that I love seltzer water.

Go-To Recipe: Ropa Vieja

I think it's important for everyone to have a small collection of recipes that are easy to make, impossible to mess up, delicious, and healthy. These are your go-to recipes when you need to put together a last minute dinner for someone, when you want to make food for yourself for the week, when you are stumped on what to cook but want something delicious anyway.
 
This ropa vieja recipe is my #1 go-to. Amazingly, the recipe initially came from Weight Watchers, even though NOTHING about this delicious stewed meat tastes like diet food.
 
^ Slightly too much liquid in my version above, but you get the idea.
 
It's amazing over rice, cauliflower rice, roasted squash, potatoes...pretty much any starch you can think of will complement this tender, juicy, flavorful dish.
 
Plus, you can easily put it together in the slow cooker (you don't even have to brown the flank steak) and let it cook all day, or throw it inside a pressure cooker (which you should all have by now, RIGHT??) and let it go for about 75-90 minutes.
 
It hasn't let me down once, and I can't believe I haven't blogged about it by now!

Friday Funday: Nice Jewish Guys Calendar Review and Giveaway!

I get a decent number of emails each week from advertisers asking me to blog about their website or their product.  Almost all of these requests I turn down.  (See, e.g., a series of websites offering me free money to buy whatever I wanted, but with absolutely horrific clothing and jewelry for sale, including items with names resembling, "Rasta harem dropcrotch pant crop hippie boho patterned bottoms.")  Some of these requests, I wish I'd turned down.  (I'm currently staring at a packet of gummy vitamins (I love gummy vitamins) that, based on the information on the package, I fear will give me explosive poops.  But I'm morally bound to try them and perhaps endure explosive poops for you, my readers.)

However, I recently received a product review request that sent me over the moon with happiness.

Remember three years ago, I told you guys about a "Nice Jewish Guys" calendar featuring --- you guessed it --- nice Jewish guys gracing each month's pages?  Back then, I thought the idea of a calendar featuring nebbishy Jewish men was an absolutely hilarious idea and a great gift for Jewish girls (or other Jewish boy-loving people) on your list.


Well, the people in charge of marketing this calendar contacted me last month and offered me a 2014 Nice Jewish Guys calendar of my very own!  Now THIS is right up my alley.


Having carefully reviewed this calendar, I can now give it my hearty endorsement.  The calendar is chock-full of awesome photos of very Jewish-looking guys, some of whom are doing very Jewishy things.

Brendan is making matzo brie like your dad used to make during Channukah!

I brought this thing to my weekly poker night and it garnered rave reviews from the guys in attendance:

This calendar is a laugh a minute (or, more accurately, a month), and even includes all of the Jewish holidays.  Even the obscure ones that nobody celebrates!  ("Fast of the 17th of Tammuz," anyone?)  

I even had the chance to interview one of the JDate.com-sponsored Jewish guys featured at the back of the calendar, Sam.


Here are some highlights:

How did you become involved in the Nice Jewish Guys Calendar?  What was your first thought upon learning about the calendar?

I saw the contest on JDate and talked about it with my sister and a female friend of mine.  After some encouragement from them and reading some of the other entries, I decided to submit an entry for fun.  After I was told I was selected as one of the Nice Jewish Guys of JDate, I didn’t really know what form my inclusion in the calendar would take until a friend of mine called from work saying, “I’m looking at the Nice Jewish Guys calendar with you in it!”

What makes you a "nice" Jewish guy?

Living with values and morals adopted and refined from my Jewish upbringing and military service is why those in my life consider me a “Nice Jewish Guy.”  I see myself as someone who lives a life of integrity, candor, selfless service, respect and courage – all qualities which make me stand out in the crowd.

What is your favorite Jewish food?

This question is like asking a parent to admit which child is their favorite.  Pastrami, knishes, matzoh ball soup, cholent, challah, Israeli salad and falafel are all great. However, I think that the true mark of Jewish food is the effort we put in to getting it right. I come from a family of kosher butchers so it’s no surprise that while I was stationed overseas I had hard salami and beef frye sent to me regularly. The greatest effort I’ve exerted so far was for great kosher dill pickles.  Earlier this year I tore out four trees (roots and all) from my father's backyard so that I could grow cucumbers and dill to make my own homemade dill pickles. They were not only my favorite, but the favorites of everyone who tried them.

Best Jew-y childhood memory?

I think my best Jew-y childhood memories all stem from being invited over to friends’ houses for Shabbos. Even though most of them were observant, which meant no TV and going to more services than I may have liked, I associate those memories of Shabbos with great food, acceptance and warmness, which I consider true characteristics of Judaism.

Describe your ideal woman.

My ideal woman would come in part from my interpretation of Immanuel Kant's Observations on the Feeling of the Beautiful and Sublime. I am in pursuit of the sublime over the beautiful. To me the sublime encompasses the truly important, lasting things such as genuine kindness, sweetness, smarts, critical thinking, affection, a nurturing demeanor and natural beauty over fleeting and superficial beauty.

What do you most wish you could change about Jewish girls?

I'd first like to say that I would never want to change anybody.  Everybody has the right to live their life the way they see fit as long it doesn't infringe on those rights of others.  In love, the right person is going to be perfect, flaws and all. 

That being said the thing I don't like about Jewish girls, or guys for that matter, are those who live up to negative Jewish stereotypes.  Despite my name, many people are surprised to find out that I'm Jewish.  I think the reason is that I don't fit many of the typical Jewish stereotypes. When a girl lives up to the negative stereotypes such as being whiny, overbearing and having a sense of entitlement like the clichés of a Jewish-American princess, I am immediately turned off.

Has your recent calendar celebrity yielded any interesting romantic offers?

Not yet.  I think the Shiksas in my life love the "celebrity" status the most.  The calendar has been a hit with family, friends, army buddies and people at the gym. When I walk into the gym I am greeted as the “Nice Jewish Guy.”  Friends have jokingly wondered how long it would take for me to be a pinup.  Every time I go to an LA Galaxy game,my season ticket holder neighbor requests a signed copy of the calendar. However, I would be surprised if the calendar "notoriety" would lead to any “interesting romantic offers,” even if it was posted at every synagogue and sent to every Jewish mother and grandmother.

What's your best Nice Jewish Guy advice for winning over Jewish mothers? 

Just be genuine and honest in addition to all the other qualities of being a nice guy.  If you have to be flashy or go on a charm offensive, it's probably not worth the effort for a number of reasons.  I have had a few instances where the parents were more charmed by me than the girl I was courting.  

I mean, TAKE A NUMBER!  AMIRIGHT, LADIES?  


Don't you just wish you could have a calendar of your very own, to love and cherish for as long as you both shall live?  (i.e., for the duration of 2014?)

Battling The Blahs

Hey everyone.  Sorry I've been MIA...I've been battling a serious case of the blahs.  I will return with outfit posts soon, but in the meantime, here are two of my favorite places to go to battle mild bouts of non-clinical depression:

Crossfit (or Exercise Generally)


One of my worst qualities as a human being is the fact that it is extremely easy for me to slip into complete physical inactivity.  I don't know how it happens; I will go from working out 3-5 times a week to ZERO for WEEKS.  However, I've noticed in the last few months that going more than two days without physical activity has a very dark effect on my mood.  It's wonderful to recognize this, as it's helped me both to keep a regular exercise schedule and to recognize the biological factors (i.e., lack of endorphins) that could be impacting my mood.  I like Crossfit, but I also try to bike or run if I don't feel like attending an exercise class.

Washington Humane Society


There's something comforting about hanging out with animals, especially when you have zero responsibility for cleaning up after them and just get to participate in the fun stuff, like cuddles and ear scratches.  I found myself at the Washington Humane Society's Northeast DC outpost one day just to look at the animals (this location is convenient running distance from my house), and to my delight I discovered not only a very friendly staff that is happy to have you hang out with the pets even if you are not adopting (and will not judge you if you sit on the floor for an hour with two kittens falling asleep in your lap), but there is also a room in the shelter called "Kitty City" (pictured above) that is basically just a room full of cats.  You can walk into the room and just pet whatever cat comes up to you looking to be pet.  It is an amazing mood-booster.  (If you don't have a humane society near you but still want to help the pets, why not buy something for the Humane Society next time you are on Amazon?  Our DC humane society has an Amazon wish list, and your local one probably does, too.  I threw a $4 set of newborn kitten bottles in with my last order of poker chips.)

The Newest Member of the [Bag] Family

If you couldn't tell from the, oh, SEVEN MILLION bags I have purchased in the last month, I'm going through a bit of a bag phase. At some point perhaps I will document the bag binge I went on this month, but I'm not sure I want photographic evidence.

In any case, I visited an outlet mall this weekend with the intention of ridding myself of a Cole Haan gift certificate* that's been burning a hole in my pocket for about a year. Is anyone else like this with gift certificates? Sometimes I worry that if I don't just force myself to spend it, I will forget about it and it will expire. (This is of particular concern for stores I don't shop at as much, like Cole Haan.)

* I got the gift certificate after complaining to Cole Haan customer service that a bag I'd purchased at the outlets a year prior had become faded/discolored on only one panel. To Cole Haan's credit, they let me send the bag back, they inspected it and determined it was defective, and then gave me a gift card for the purchase price, even without a receipt. Even more, the gift card was good not only at outlets, but also online and in retail stores. Things like this make me much more likely to continue shopping a brand, so thanks for that, Cole Haan.

Sad; the bag had such promise.

Anyway, here's one of the things I got with the gift card:

Things I was not kidding about: my love for big bags.

What I like most about this tote, aside from the great texture on the outside of the bag (the inside is rough) is that it's super smushy so it does not look too imposing from the front and it also smushes perfectly underneath/behind a second bag, if you want to use this as a gym bag/lunch bag/secondary bag of whatever purpose.


The added bonus is that there are these nice pockets and a key clip on the side so you don't have to fumble around for your phone or keys.

You can see the rough unfinished qualities of the interior leather here.  It doesn't bother me but if you prefer a more refined lining then give this a pass.

Anyway, it's a cute bag and it's definitely worth the "free" that I paid for it, although it's also probably worth the $125 outlet price if you're in the market for a good leather tote bag.

What the WHAAA? (a.k.a., An Interesting Sale Find)

Good morning.  Happy Monday.  For the record:  I don't care what your intentions are, but leaving a dozen chocolate cupcakes with peanut butter frosting in the breakroom on a Monday morning is just cruel.  LET ME RECOVER FROM AN EAT-Y WEEKEND IN PEACE.

Anyway, just a quickie this morning to share a shopping find I stumbled upon while returning several of my purchases this month.  (INCLUDING the MBMJ bag approximately half of us, including myself, loved.  I just found myself gravitating towards other bags and couldn't justify the full sticker price.  Also, this other MBMJ tote (the lavender one) in the same style seems to be filling the void for a slouchy but professional-ish neutral leather bag.)

NEITHER DID I.  I'd been toying around with the idea of setting money aside for a Prada tote in December, using some of my bonus money and directing my parents to provide Channukah gifts in the form of purse-money or gift cards, but I was frustrated with the fact that you seemingly have to choose between a larger Prada or a shoulder strap.  (Correct me if I'm wrong, but it seems like shoulder straps are only offered up to a certain size?)  Anyway, we know I like big bags so this bothered me.

The size of this bag is perfect.  Definitely big enough for a laptop and then some.  I stupidly did not take a photo of the bag on me, but here's Zappos' photo of it against a model:


The leather feels rich and the construction looks solid for a bag at this price point.  My biggest problem with it (and I actually find this SUPER annoying) is that there is a RLL monogram on the front center of the bag instead of a logo (not visible in the first photo, but you can see it in the second).  My initials are not RLL so when I look at this it irks me a bit.  But I'm willing to overlook it given the bag's other great qualities and the reasonable price.

Even better, if you buy the bag at Macy's*, you can ask to purchase the bag as a "presale" item.  I guess Macy's is having some big sale starting on September 18 in which everything will be 20% off.  If you are willing to wait to possess this bag until the 18th, Macy's will let you buy it for 25% off today and then you can go pick it up on the 18th.  I'm not sure how presales work online (try calling customer service?) but I was able to arrange for my presale in the store.  With the 25% off, the purchase came to a very reasonable $223 before tax.

FYI:  It also comes in tan, red, and pink (or purple?  The Zappos photo* looks purple but the Macy's photo* looks pink).

A Super-Obnoxious Post About Coconut Water

But first, a joke courtesy of my friend Tony:

Soooooo, I've been doing a little Crossfit.  I mostly like it; it's a good workout and the coaches/fellow classmates I work with are pretty great.  I do find some/many aspects of the culture to be a little too much.

My biggest dislike of the whole crossfit thing is that, even at gyms that say they are not trying to impose higher values on you, you generally do feel like non-caveman/paleo choices are seen as bad with little to no room for argument.  That's not to say that caveman/paleo choices are bad either, just to say that we're all trying to be healthy and eat well and it seems kind of counterproductive to say that the only good form of exercise is Crossfit and the only good form of eating is Paleo.  But whatever, I'm just there to get my sweat on.

Anyway, given this, I was initially very skeptical when I overheard one of my WOD class members raving about an obscure brand of coconut water that was just "Sooooo good" and "Makes Vitacoco taste like crap"

I enjoy coconut water.  I drink it after particularly difficult runs or crossfit classes as a way to get some potassium (good for muscle recovery) and hydration without imbibing fluorescent sports beverages.  I don't have any problem with Vitacoco and think it tastes pretty good, so naturally I assumed this guy was just being kind of snooty.  My assumption was strengthened when he said that his mom had to ship him the stuff from Puerto Rico because he couldn't find it in any stores around here.  ::eyeroll::

Let me apologize to this guy right now for my unfair thoughts, because I found a can of this coconut water in a grocery store on Monday, tried it, and HOLY SHIT you guys, this is like no coconut water I've ever had before.  The taste is rich, almost creamy, and it's only 100 calories for an enormous can.


I will never drink another brand of coconut water again...the difference in taste is truly astounding.  As the guy at the gym said, it's almost like a completely different product than the more popular brands.

If you dislike coconut water, I highly encourage you to give this brand a try and see if it doesn't change your mind.  If you already like coconut water, you should just go ahead and order a twelve pack* because heavens to Betsy, this stuff is fantastic.

I NEED AN[OTHER] INTERVENTION

I have been wearing one of the two colors three to five days a week and it's becoming a problem. People are starting to notice. I'm concerned for my creativity because it's just so easy to throw this thing on and neglect the rest of the outfit because really, the necklace is enough.

It's just so perfect for summer! And maybe fall/winter/spring! Hopefully I'll get bored with it soon, but at least for now I've definitely gotten my money's worth out of these things!
