The PBJ-Cristo

Now, I will grant you that, in general, it is a poor idea to get recipe ideas from ThisIsWhyYou’ if you are watching your weight.

However, I’ve always loved a challenge.

Perhaps it’s because I stumbled upon this peanut butter french toast before I’d eaten breakfast, but I knew I could make this in a points-friendly fashion. Without further ado, I present to you:

The PBJ-Cristo
  • Two slices light bread
  • Two tablespoons PB2 powdered Peanut Butter
  • One tablespoon water
  • One teaspoon sugar free jam (optional)
  • 1/4 cup egg beaters
  • 1/8 cup milk
  • 1/4 tsp brown sugar (optional)
  • Two tablespoons sugar free breakfast syrup (optional)

  1. Mix PB2 and water to rehydrate. Spread peanut butter on bread.
  2. Spread jelly on bread, if you so desire. Put the two pieces of bread together to form a sandwich.
  3. Mix the egg beaters, milk, and brown sugar. Dip the sandwich in the mixture and allow it to soak it up (be sure to flip the sandwich to get both sides of the bread)
  4. Spray a frying pan with Pam and bring to medium-high heat. Place the sandwich in the pan.( will be heavy and laden with egg mixture)
  5. Cook for two minutes each side, or until golden brown and no longer soggy.
  6. When finished, place on a plate and eat. Top with syrup if you want (trust me, you won’t need more than two tablespoons)

I left off the bananas because I didn’t have any, but if you top with 1/4 of a banana, that’ll only add .5 points.
